New Year Steak Pie Recipe

A traditional steak pie served on New Year's Day in Scotland.

 

Ingredients:

For the Filling

  - 500g diced Scotch beef

  - 1 tablespoon vegetable oil

  - 1 onion, finely chopped

  - 2 carrots, diced

  - 2 cloves garlic, minced

  - 1 tablespoon plain flour

  - 300ml beef stock

  - 1 tablespoon Worcestershire sauce

  - 1 teaspoon dried thyme

  - Salt and pepper to taste

 

For the Pastry

  - 225g plain flour

  - 100g cold butter, diced

  - A pinch of salt

  - 4-5 tablespoons cold water

  - 1 egg, beaten (for glazing)

 

Instructions:

 

1. Prepare the Filling:

1. Heat the vegetable oil in a large pan over medium heat. Add the diced Scotch beef and brown it on all sides. Remove the beef and set aside.

2. In the same pan, add the chopped onion and carrots. Cook until softened, about 5-7 minutes.

3. Add minced garlic and cook for an additional minute.

4. Sprinkle the flour over the vegetables and stir well to combine. Cook for another minute.

5. Gradually pour in the beef stock and Worcestershire sauce, stirring constantly to avoid lumps.

6. Return the browned beef to the pan and add dried thyme. Season with salt and pepper.

7. Bring to a simmer, then reduce the heat and let it cook for about 1-1.5 hours, or until the beef is tender. Stir occasionally. If it becomes too thick, add a little more stock or water.

 

2. Make the Pastry:

1. In a mixing bowl, combine the plain flour and salt. Add the cold butter and rub it into the flour with your fingertips until the mixture resembles breadcrumbs.

2. Gradually add the cold water, mixing until the dough comes together. Wrap in cling film and chill in the fridge for about 30 minutes.

 

3. Assemble the Pie:

1. Preheat the oven to 200°C (180°C fan)/400°F.

2. Roll out two-thirds of the pastry on a floured surface to fit your pie dish. Place it in the dish, trimming the edges.

3. Fill the pastry with the cooled beef filling.

4. Roll out the remaining pastry to cover the top of the pie. Seal the edges by crimping with a fork or your fingers.

5. Cut a small hole in the centre of the pie to allow steam to escape, and brush the top with the beaten egg for a golden finish.

 

4. Bake:

1. Place the pie in the oven and bake for about 25-30 minutes, or until the pastry is golden brown.

2. Once cooked, let it cool slightly before serving.
